Tues. 9th – ITALY AL FRESCO – Taught by Mary Spencer - $40.00 per person - 6 - 8 p.m. Take a culinary journey to
the sun drenched peninsula of Italy. Mary prepares White Bean Salad with Fresh Sage and Thyme, Sardinian Parchment
Bread, Angel Hair Pasta with Garlic Parsley Sauce, Baked Risotto with Asparagus and Spinach, Stuffed Chicken Breast
with Mushroom Wine Sauce and Ricotta Cheese Cake.
Thurs. 11th – VEGETARIAN FEAST – Taught by Mary Spencer - $40.00 per person - 6 - 8 p.m.These hearty entrees
prove that vegetarian dishes can be delicious and satisfying. The demonstration will include Tomato Galette, Roasted
Eggplant and Chickpea Stew, Vegetable Lasagna, Warm Lentil Salad with Sun Dried Tomatoes.
Sat. 13th – COOKING POULTRY – Taught by Mary Spencer - $40.00 per person - 6 - 8 p.m.These poultry dishes
demonstrate a number of different cooking techniques. Recipes include Chicken Fricasee with Pappardelle and Sun Dried
Tomatoes, Stuffed Chicken Breasts with Zucchini, James Beard’s Chicken with 40 Cloves of Garlic, and Chicken Satay
with Peanut Sauce.
Tues. 16th – ART OF THE CAKE – Taught by Mary Spencer - $40.00 per person - 6 - 8 p.m.Cakes from classic
simplicity to sublime decadence. Mary demonstrates Angel Food Cake with Raspberry Whipped Cream Frosting, an Old
Fashioned Pound Cake, a Lemon Chiffon Cake and a decadent Chocolate Cake.
Thur. 18th – BASIC THAI CUISINE – Taught by Mary Spencer - $40.00 per person - 6 - 8 p.m. - Mary offers a new
selection of fresh and vibrant Thai recipes including Tom Yum Soup, Crispy Noodles, Panang Style Curry with Prawns, Thai
Style Chicken with Chilies and Basil, Pad Thai and Mango Sticky Rice.
Sat. 20th – ROMANTIC DINNER – Taught by Mary Spencer - $40.00 per person - 6 - 8 p.m. - A 5 course romantic
dinner for two. The menu will include Scallops Oreganata appetizer, a succulent Rack of Lamb and decadent Chocolate
Cupcakes with Molten Centers.
Tues. 23rd – INDIAN CUISINE – Taught by Mary Spencer - $40.00 per person - 6 - 8 p.m. - This class offers a
traditional Indian meal including Samosas, Stir Fried Prawns in Tomato Cream Sauce, Mattar Paneer, Red Lentils, Yogurt
and Cucumber Raita and Mango Lassi.
Thurs. 25th – LASAGNA AND RAVIOLI – Taught by Mary Spencer - $40.00 per person - 6 - 8 p.m. - In this hands on
class students learn how to make a Wild Mushroom Lasagna, 3 Cheese Ravioli, a classic Italian/American Lasagna and
Agnolotti with Crab and Shrimp.
Sat. 27th – DIM SUM – Taught by Mary Spencer - $40.00 per person - 6 - 8 p.m. - Learn how to make these
delectable Asian appetizers at home. The demonstration will include Har Gau (Shrimp Dumplings), Gyoza (Japanese pork
filled dumplings) and Spring Rolls.
Tues. 30th – RISOTTO AND OTHER ITALIAN GRAINS – Taught by Mary Spencer - $40.00 per person - 6 - 8 p.m. -
Learn how to prepare some delicious recipes utilizing the signature grains of Italy. Mary will prepare a Milanese Saffron
Risotto, Farro Soup, Crab and Asparagus Risotto, and Sausage Stew with Polenta.
REGISTRATION - All students should register at least three days in advance of each class. If there are not 8 students registered for class two days prior, the class will be cancelled.
