Classes need to be reserved and paid in full at least
2 days prior to class - so that we won't have to cancel the class.
If we do not register at least 8 students 2 days before class, the class will be cancelled.  
Classes are all demonstration method, unless otherwise mentioned in the class description.
If you choose to cancel, we ask that you call at least
48 hours in advance
to notify us, otherwise your payment will not be refunded.  
If a gift certificate is used to secure a seat in a class, and the customer does
not call ahead to cancel, or does not show up at class, the gift certificate will be considered void.

Weds. 3rd - OLD ENGLISH CHRISTMAS - 6 - 8 P.M. - $40.00 - Taught by Mary Spencer.  Join us at
Scottie’s and learn how to make a traditional Olde English Christmas Feast.  Mary will demonstrate how to
cook a show stopping, succulent, flavorful Prime Rib of Beef with vegetables and Yorkshire Pudding.  The
dessert will be an English Trifle.  So simple…so easy…so delicious!  With this class, the dilemma of what to
serve for the holiday dinner will be solved forever.

Tues. - 13th - ALL WRAPPED UP - 6 - 8 P.M. - $40.00 - Taught by Mary Spencer.  It’s fascinating to note
that cuisines around the world feature dishes consisting of a flavorful filling wrapped inside dough.  
Consider this wide ranging selection:  Empanadas (Mexico), Pasties (Finland), Pierogi (Poland), Dim Sum
(China), Samosas (India), Spring rolls (Asia) and Ravioli (Italy). What’s going on there?  We surmise that
the need to create a hearty and economical meal transcends geographical and ethnic constraints.  In this
class, Mary will demonstrate how to make a wide variety of dough wrapped dishes.  Students will leave the
class with the ability to prepare several authentic ethnic recipes including empanadas, dim sum and
samosas.

Thurs. - 15th - WEIGHT WATCHER MEALS - 6 - 8 P.M. - $40.00 - Taught by Mary Spencer.  






Tues. - 20th -
SOUFFLÉS AND MOUSSES - 6 - 8 P.M. - $40.00 - Taught by Mary Spencer.  A well
constructed soufflé is a drop dead show stopper.  A cloud light mousse comes in a close second.  These
ethereal desserts need no longer be enjoyed strictly in fine dining establishments.  You too can dazzle your
guests with these dessert marvels.  Mary will show you how.  She will teach the class how to make a frozen
Tangerine Souffle, a savory soufflé, a hot dessert soufflé and a decadent chocolate mousse…

Thurs. - 22nd -
FISH - - 6 - 8 P.M. - $40.00 - Taught by Mary Spencer.  Today, the landlocked consumer is
offered a wide selection of high quality fresh and saltwater fish.  The only problem is what to do with it.  
With a little cooking knowledge and practice fish can become a healthy and delicious staple in the family
diet.  Mary will demonstrate how to prepare a wide selection of fish dishes utilizing a variety of cooking
methods.  Mary’s recipes will include cured Gravlax, Mediterranean Poached Salmon and Roasted Cod
with Savoy Cabbage and White Beans.

Weds. - 28th -
SOUTHERN FLARE - 6 - 8 P.M. - $40.00 - Taught by Debbie Jones. .  Southern cooking is
“IN”!  From barbecue, in all it’s geographical incantations, to Paula Deen and Emeril LaGasse people can’t
get enough of Southern cuisine.  One wonders, however, how many people actually cook southern food and
how many are hesitant to attempt the southern recipes we see on TV.  Well, not to worry.  Scottie’s has you
smothered like an etouffee.  It just so happens that Scottie’s owner Debbie is a southern belle, born and
bred.  She has spent some three decades of Sundays at the Café du Monde and Commander’s Palace and
is anxious to share her gift of southern hospitality.  Come to class and learn how to make a tremendous
Gumbo and other southern specialties.   

Fri. - 30th -
PRESSURE COOKER - 6 - 8 P.M. - $40.00 - Taught by Mary Spencer.  Ah, the good old days
of pressure cooking…the pervasive aura of fear surrounding that diabolical cooking machine…its seismic
rattle sending chills and thrills down the spine…the faint tomato stains on the kitchen ceiling standing in
silent testament to the day in family infamy when the pressure cooker finally blew.  Well, for better or
worse, it’s a new dawn.  Today’s pressure cooker is a safe and efficient kitchen workhorse ready to make a
wide selection of quick, easy and tasty meals.  In this cooking class, Mary will teach how to use the
pressure cooker, allay any remaining fears and feature some delicious recipes including, German Potato
Salad and Turkey Chili, which will become family favorites.





Tues. - 3rd -
PIZZA - 6 - 8 P.M. - $40.00 - Taught by Mary Spencer.  Pizza is an Italian culinary creation.  
Or is it?  Some argue that pizza was popularized in America and migrated back to Italy.  But don’t make
that claim in Naples where, in 1889, pizzaiolo Don Raffaele Esposito is said to have invented the classic
Pizza Margherita in honor of his Queen’s birthday.  In this class, Mary gives you an in depth look at pizza
making for the home cook.  She will demonstrate how to make a classic Pizza Margherita, a gourmet
Smoked Salmon Pizza, a Thai Chicken Pizza and a unique Salad Pizza.  Mary will cover pizza basics
including dough making and use of the pizza stone.

Thurs. - 5th -
FRENCH COUNTRY SIDE - 6 - 8 P.M. - $40.00 - Taught by Mary Spencer.  One can argue
that the ability to take a modest cut of meat and transform it, slowly and lovingly, into an opulent feast
constitutes the pinnacle of culinary achievement.  And, who does this better than the French?  Mary invites
you to share some of her favorite wintertime meals from the French countryside.  Her class will include an
Alsatian Choucroute (pork and sauerkraut stew), a Beef Daube (classic beef stew) and a Pissaladiere
(Nicoise onion tart).
